For example, a three ounce steak or filet of cooked wild salmon, about the size of a deck of playing cards, will contain about 252 milligrams of phosphorus. This is higher than the equivalent piece of beef, which is only 173 milligrams, but wild salmon is also rich in nutritious omega 3 oils. And research at the Harvard Medical School showed that treating kidney disease to a diet rich in omega 3 oils can reverse the condition. So, overall, a better bet when on a kidney failure diet.

Nuts are a vital part of a healthy diet and although they contain high levels of phosphorus. But only about half of this is broken down and available for use by the body.

Foods to limit include: cheese, pizza, sausage, hot dogs, bacon, ribs, lard, butter, coconut (all forms) and all other forms of tropical oils.
Cholesterol: not more than 300 milligrams per day should be consumed and even less (200 milligrams or less) for those with heart risks. Foods to watch out for include eggs, chicken or beef dishes, hamburgers, seafood, dairy, lard and butter.

All of us should pay attention to the amount of fat we consume. But we also need to be aware of the types of fats we consume, as some are better for us than others. By understanding the differences among all the fats, we can make the best food choices to ensure we live healthy and heart-smart.

According to a study published in the Journal of Consumer Research, people on a diet can become irritable and hostile when they cut back on calories and are forced to use too much self-control when making food choices. They found while restricting calories, dieters preferred watching movies with angry characters and revenge themes and gravitated towards angry faces and gestures over fearful or sad ones.

Other research shows that dieters are more prone to anxiety and depression, and if they calorie restrict too much, they can become fixated on food. This is the same type of response victims of starvation and people with eating disorders have. There's also the danger of becoming so frustrated that dieting turns into bingeing - and then guilt for having given in to temptation. This type of behavior can be a forerunner to an eating disorder.

Obviously, the risks of dieting go beyond the physical - to the mental. If you're feeling cranky and are difficult to get along with, you may be taking calorie restriction too far.

If you're trying to lose weight, it's not a good idea to cut your calories back by more than 500 calories a day. Otherwise, you run the risk of mood changes and a lack of energy and motivation. Cutting back by 500 calories a day still allows you to lose about a pound a week. When you cut calories, it's important to make every calorie count nutritionally to prevent vitamin and nutrient deficiencies.

Excessive dieting can make you tired, anxious, angry or depressed. Don't take it to the extreme by cutting your calories too low - and make sure you're making every calorie count by choosing healthy foods.

Each year, medical professionals discover more and more of their patients suffer from digestive conditions, like irritable bowel syndrome (IBS) or constipation, due to sensitivity to gluten. People suffering from an

allergy to gluten are commonly affected by a disease known as celiac disease.

Celiac disease is a digestive disease that inhibits the absorption of certain food nutrients due to an allergic reaction to gluten, which is a protein derived from wheat, rye, and barley. People affected with celiac disease can experience damage to their small intestine and other parts of their digestive system, if their condition is left undiagnosed and they eat foods with gluten or wheat protein.

One problem with diagnosing celiac disease is the fact that its symptoms are similar to common ailments, such as gas or a common stomach ache. Other common symptoms of celiac disease include chronic diarrhea, constipation, and abdominal bloating or pain.

Celiac disease differs from gluten sensitivity, because with celiac disease the body usually produces antibodies to attack gluten. While a person may not have celiac disease, it does not mean that the person is not suffering from a gluten sensitivity, which is most cases carries the same symptoms of celiac disease less the intestinal damage.

Once diagnosed with celiac disease or a gluten sensitivity a person can be left with a dilemma: "What am I going to eat that doesn't have wheat in it?" Although more restaurants and grocery stores have taken notice of celiac disease, few offer a wide range of alternative food options, other than typical Atkins-like dishes or pure vegetarian dishes, such as hamburgers without buns or salads without croutons.

These alternative dishes are certainly more healthy than the typical fast food takeout since removing bread often removes up to 200 calories from any dish, but they still

may leave a person craving carbohydrates. Fortunately, a person with celiac disease, a gluten sensitivity, or a person simply interested in a gluten free diet, can continue to eat many of their favorite foods, so long as they modify certain ingredients, and in many cases, prepare the food themselves.

Contrary to popular restaurant menu choices, a gluten free diet does not require the removal of all carbohydrates. Instead, people following a gluten free diet can enjoy their same favorite dishes by substituting alternative carbs using alternative flours, including brown rice flour, millet flour, or corn flour, to make breads and doughs.

Other sources of gluten free carbohydrates include sweet potatoes, rice, corn, quinoa, bananas, and a variety of foods modified to be gluten free, such as gluten-free pasta. To keep things simple, people with gluten free dietary restrictions should shop primarily in stores that cater to directly to their needs.

For example, BabyCakes, a popular vegan dessert chain located in New York and Los Angeles, creates a variety of gluten-free cupcakes and donuts using rice flours and other non-spelt flours. Spelt is a type of flour consisting of a variation of a wheat grain, which some people with celiac disease can tolerate, but others cannot.

Grocery stores, like Whole Foods, serve gluten free pizza made from special gluten free flour and other fresh ingredients in their hot food sections. In fact, health based grocery stores, including Whole Foods and Trader Joes, tend to offer the most extensive food options for people maintaining a gluten free diet.

These grocery stores carry products ranging from flour-less brownies, corn tortillas, gluten free bagels, gluten free pancakes, and rice milk. Easy access to gluten free foods makes it easier to shop for food, and decreases the risk that a person suffering from celiac disease will mistakenly buy a product with gluten.

Luckily, the awareness of celiac disease is increasing, and many local supermarkets are beginning to carry brands that recognize it. For example, General Mills Rice Chex is now gluten-free and in June 2011, Kellogg's plans to introduce gluten free Rice Krispies.

Additionally, people on a gluten free diet should beware of hidden sources of gluten. These sources can be found in certain alcoholic beverages, homeopathic remedies, cereals, granola bars, certain cheeses, vinegars,

soy sauces, moisturizers, and even some medications. Consult your doctor to prepare a list of basic foods and products to avoid.

While following a gluten free diet may involve special attention to food preparation, shopping habits, and most of all, carbs, many people continue to enjoy their favorite carb recipes by changing ingredients. In the long run, a gluten free diet can help people to become healthier and improve the overall function of their digestive system.

The Paleo Diet – Getting Back to the [healthy] Basics

For thousands of years our ancestors in every continent on the planet found all of the nutrients their bodies had evolved to require in the things in nature that surrounded them. In this Paleolithic period of our history, they thrived and were very healthy. In most cases their brains were larger than ours, they were generally taller than we are, and they were far more physically fit than most non-athletes are today.
Most scientists agree that the diet that fueled their health and vitality was quite different from that of most modern westerners, although genetically we remain 99.99% identical to them. Around one-third of the food they ate was wild game they hunted and fish, and the two-thirds balance was derived from berries, seeds, fruits, melons, nuts, bulbs, stalks, roots, leaves, and flowers that they gathered. Meat and fish gave them the essential fatty acids and protein, and meat made up about 65% of their energy intake.
The domesticated, grain fed cattle we eat today is quite different from the wild game our ancestors ate, in that domestic cattle average around 30% total fat, in place of the less than 10% total fat average of wild game. In addition, domestic meat from grain fed animals contains mostly saturated fats, rather than the higher percentage of polyunsaturated fats found in wild game. This means that we now have four times less omega-3 fatty acids than our hunter gatherer ancestors had, and about one and a half times less monounsaturated fat. The human body needs a certain amount and quality of fat for certain processes. Vitamins A, D, E, and K, for instance, cannot be absorbed without it.
Nuts and seeds added other oils and essential fatty acids to our Paleo ancestors diet, and berries and fresh fruits gave them complex carbohydrates and other nutrients. A large part of their diet consisted of gathered vegetables and plants – leaves, flowers, stalks, bulbs, and roots. These were all consumed fresh and raw, which gave them the most benefit from the nutrient rich content and greatly benefited their immune systems.
Grains and small seeds, while they were around, were never ground into powder and cooked for consumption during this Stone Age period. That came only with the advent of agriculture and the domestication of animals, two of the most prominent things that marked the beginning of the Neolithic period. These things also began our journey into the mechanized processing of grains and other foods, the addition of pasteurized dairy products into our diet, and our exorbitant intake of sugar and simple carbohydrates.
At the end of the day, one thing is certain. The diet of our Paleolithic ancestors is still the diet that is best suited for our metabolisms today. We thrived for countless centuries consuming only the things that were naturally available, and our bodies needs for maintaining health and vitality remain the same.
